  • 1/2 cup granulated sugar
  • 1 cup rolled oats
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup honey
  • 1 tablespoon lemon zest
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine butter, sugar, oats, and flour until crumbly. Press into an 8×8 inch baking dish and bake for 15 minutes until golden brown.
  2. Whisk together eggs, honey, lemon zest, and lemon juice in another bowl. Gradually mix in remaining flour until smooth.
  3. Pour the filling over the pre-baked crust and return to the oven for an additional 20-25 minutes until set.
  4. Allow to cool completely before slicing into squares.
