  • 10 oz pasta (fusilli or whole wheat)
  • 1 cucumber (diced)
  • 1 pint tomatoes (halved)
  • 1.5 cups spinach (roughly chopped)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1/4 cup olive oil
  • 3.5 tbsp red apple vinegar
  • 1 tsp Dijon mustard
  • 1.5 tsp oregano
  • 1 tsp dried mint
  • 2 cloves garlic (minced)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (freshly ground; adjust to taste)
  • 1/8 tsp red pepper flakes (optional)

Instructions

  1. 1. Cook the pasta in a large pot of boiling water until al dente. Drain using a colander and set aside to cool.
  2. 2. While the pasta cools, chop the cucumber, tomatoes, spinach, and red onion.
  3. 3. In a mixing bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, dried mint, minced garlic, salt, black pepper, and optional red pepper flakes.
  4. 4. In a large bowl, combine cooled pasta with prepared vegetables, Kalamata olives, and feta cheese. Pour over the dressing and gently toss until well coated.
