  • 1/2 cup Dairy-Free Butter (Melted)
  • 1 cup Dairy-Free Milk (Room temperature)
  • 1/4 cup Caster Sugar
  • 2 teaspoons Active Dry Yeast
  • 3 cups Plain Flour
  • 1 tablespoon Pink Food Gel (Natural beetroot powder)
  • 1 cup Fresh/Frozen Raspberries
  • 1/2 cup Strawberry/Raspberry Jam
  • 1/4 cup Dairy-Free Cream Cheese
  • 2 cups Icing Sugar

Instructions

  1. Combine melted dairy-free butter and dairy-free milk in a mixing bowl. Add caster sugar and yeast; let sit for about 5 minutes until bubbly.
  2. Gradually mix in sifted flour and pink food gel until you form a dough. Knead gently for about 5 minutes until smooth.
  3. Place the dough in a greased bowl, cover it, and let it rise for about 90 minutes or until doubled in size.
  4. In a saucepan over medium heat, combine raspberries, sugar, water, and cornflour. Stir until thickened; let cool slightly.
  5. Roll out the risen dough into a rectangle; spread jam followed by raspberry filling and chopped strawberries. Roll tightly into a log shape and cut into equal pieces.
  6. Let rolls rise again for 30 minutes while preheating your oven to 350°F (175°C). Bake for about 25–30 minutes until golden brown.
  7. For frosting, mix softened dairy-free butter, cream cheese, icing sugar, vanilla extract, and optional freeze-dried fruit until fluffy.
  8. Drizzle frosting over warm rolls before serving.
