  • 2 cups Cooked Chicken (or ground turkey, beef, shrimp, or tofu)
  • 1/2 cup Teriyaki Sauce
  • 1 cup Pineapple Chunks (fresh or canned)
  • 1 cup Cooked Rice (or quinoa/cauliflower rice)
  • 1 cup Cheese (optional)
  • 1/4 cup Fresh Cilantro or Parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds. Stand them upright in a baking dish.
  2. In a mixing bowl, combine cooked chicken, teriyaki sauce, pineapple chunks, and cooked rice. Stir until well mixed.
  3. Fill each pepper with the chicken mixture gently and top with cheese if desired.
  4. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 5 minutes to melt cheese if using.
  5. Let cool slightly before garnishing with cilantro or parsley and serving.
