  • 4 yellow plantains
  • 1 lb ground beef
  • 2 tbsp avocado oil
  • ½ medium onion
  • 2 garlic cloves
  • ½ green bell pepper
  • ½ red bell pepper
  • 1 tbsp adobo seasoning
  • ¼ cup tomato sauce
  • ¼ cup beef broth
  • ¼½ tsp cayenne pepper
  • 1 tsp kosher salt
  • ½ tsp ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the ends off the plantains, score the skin, peel, and coat with 1 tbsp avocado oil. Roast for 30 minutes, flipping halfway.
  3. In a skillet over medium heat with remaining oil, sauté onion, garlic, and bell peppers until softened. Add ground beef and cook until browned.
  4. Stir in adobo seasoning, tomato sauce, broth, salt, black pepper, and cayenne; simmer for about 10 minutes until thickened.
  5. Remove plantains from the oven and cut a slit lengthwise. Stuff with the filling and serve warm.
