  • 200 grams graham cracker crumbs
  • 100 grams unsalted butter, melted
  • 600 grams cream cheese, softened
  • 150 grams granulated sugar
  • 3 large eggs
  • 200 grams white chocolate, chopped
  • 300 grams white chocolate, melted for topping
  • 250 ml heavy cream, whipped
  • 300 grams fresh strawberries, sliced

Instructions

  1. Preheat your oven to 160°C.
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press mixture firmly into the bottom of a springform pan.
  3. Beat together cream cheese and granulated sugar until smooth. Gradually add eggs one at a time, mixing well after each addition. Fold in chopped white chocolate and pour over the crust.
  4. Bake for 45 minutes; let cool completely before adding the topping.
  5. Melt remaining white chocolate and gently fold in whipped cream until combined. Spread evenly over cooled cheesecake and refrigerate until set.
  6. Just before serving, top with sliced fresh strawberries.
