  • 1 pound fresh strawberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 teaspoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. For the strawberry sauce, combine hulled and sliced strawberries, sugar, lemon juice, and water in a saucepan over medium heat. Cook for about 5-7 minutes until softened.
  2. Stir in the cornstarch mixture and cook for another minute until syrupy. Set aside to cool.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix buttermilk, egg, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients gently until just mixed; allow batter to rest for 10 minutes.
  5. Fold in diced strawberries just before cooking.
  6. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter per pancake. Cook until bubbles form on top; flip to brown the other side.
