  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. Prepare the crust by mixing crushed graham crackers (or Oreos) with melted butter and pressing firmly into the bottom of the prepared pan.
  3. In a mixing bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until combined.
  4. Pour cheesecake mixture over the prepared crust and bake for 20–25 minutes if using a mini muffin tin or 35–40 minutes for an 8×8-inch pan until set but slightly jiggly in the center.
  5. Cool to room temperature, then refrigerate for at least four hours before adding toppings.
  6. For the topping, mix crushed Oreos (or vanilla wafers) with freeze-dried strawberries and melted butter. Roll or sprinkle this topping over each cheesecake bite before serving.
