  • 4 large Portobello mushrooms
  • 2 tablespoons olive oil
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ½ cup ricotta cheese
  • ¼ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup breadcrumbs (optional)
  • Fresh parsley, chopped
  • Extra Parmesan cheese for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms, removing stems and gills, then brush them with olive oil and sprinkle with salt and pepper. Bake for 5-7 minutes.
  3. In a skillet, sauté minced garlic in olive oil, then add chopped spinach until wilted. Mix in ricotta, cream cheese, mozzarella, Parmesan, salt, black pepper, and Italian seasoning until well combined.
  4. Fill each mushroom cap with the mixture and top with remaining mozzarella.
  5. Bake for an additional 10-12 minutes until bubbly and golden.
