  • 1 lb boneless chicken breasts, cubed
  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tbsp olive oil
  • 1 cup fresh pineapple chunks (or canned)
  • 1 bell pepper, diced
  • 1 cup snap peas or snow peas
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp honey (optional)
  • 1 tsp ginger, grated
  • Salt and pepper, to taste
  • Green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium pot, combine rinsed rice and 4 cups of water. Bring to a boil, then reduce heat to low and simmer for about 15-20 minutes until fluffy.
  3. Heat olive oil in a large skillet over medium-high heat. Sauté diced onion and minced garlic until translucent.
  4. Add cubed chicken to the skillet and cook until browned.
  5. Stir in diced bell pepper and snap peas; cook until tender.
  6. In a small bowl, whisk together soy sauce, chicken broth, honey (if using), and ginger.
  7. Pour the sauce over the chicken mixture in the skillet and add pineapple chunks. Cook for another few minutes to thicken slightly.
  8. Season with salt and pepper before serving over fluffy rice.
