  • 1/2 cup powdered sugar

  • 2/3 cup unsalted butter (melted)
  • 3 cups chopped peaches (about 45 large peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice (or water)
  • 3 tablespoons cornstarch
  • 3/4 cup flour
  • 1/4 cup large flake oats (quick oats or old-fashioned oats work too)
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter (melted)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. In a medium bowl, whisk together the flour, powdered sugar, and salt. Stir in the melted butter until fully combined. Press this mixture into the bottom of your prepared pan. Bake for about 15 minutes until lightly golden.
  3. In another bowl, toss chopped peaches with granulated sugar, lemon juice, and cornstarch until evenly coated.
  4. In a medium bowl, mix together flour, oats, brown sugar, and cinnamon. Stir in melted butter until it resembles wet sand.
  5. Spread the peach mixture over the baked shortbread base evenly. Use your hands to crumble topping over the peaches generously.
  6. Place back in oven at 350°F for about 35-45 minutes until topping is golden brown.
  7. Once baked, allow bars to cool completely in pan on wire rack before glazing.
  8. In a small bowl, whisk together powdered sugar, vanilla extract, and cream until smooth. Adjust consistency as needed by adding more cream or powdered sugar.
  9. Once cooled completely, drizzle glaze over top of bars before slicing into squares.
