  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until fully combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix dry ingredients into the wet mixture until a smooth dough forms.
  5. Scoop about 2 tablespoons of dough to form discs; place half on the prepared baking sheet.
  6. Add approximately 1 teaspoon of jelly in the center of each disc before topping with another disc of dough. Seal edges tightly.
  7. Bake for 12-15 minutes or until golden around the edges. Let cool on a wire rack.
