  • 5 tablespoons unsalted butter (melted)
  • 2 tablespoons sugar
  • Pinch of salt
  • 12 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup cold heavy whipping cream
  • A few drops of gel food coloring (pastel shades)
  • Lemon zest or almond extract to taste
  • Mini chocolate eggs or jelly beans for toppings
  • Pastel sprinkles
  • Shredded coconut (dyed green for “grass”)

Instructions

  1. In a mixing bowl, stir together graham cracker crumbs, sugar, salt, and melted butter until the mixture resembles wet sand.
  2. Spoon 2–3 tablespoons of the crumb mixture into each jar. Press down firmly with the back of a spoon to create an even layer.
  3. Using a cold mixing bowl, whip heavy cream until medium-stiff peaks form. Chill while preparing the cheesecake filling.
  4. In another bowl, mix softened cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth and fluffy.
  5. Gently fold the whipped cream into the cream cheese mixture in two additions until no streaks remain.
  6. If desired, divide the filling into portions and tint with pastel gel colors.
  7. Use a piping bag or spoon to fill each jar with cheesecake filling over the crust, leaving some space for toppings.
  8. Cover each jar with a lid or plastic wrap. Refrigerate for at least 2 hours—or up to 24 hours—to allow them to set properly.
  9. Before serving, add coconut “grass,” sprinkles, and mini chocolate eggs on top.
