  • 1 pound steak (ribeye, strip, or sirloin)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 pinch paprika
  • 1 tablespoon red apple vinegar
  • 1 cup cooked quinoa or brown rice
  • 2 cups chopped romaine lettuce
  • 1 cup cucumber (diced)
  • 1 cup grape tomatoes (halved)
  • 1/2 cup red onion (marinated)
  • 1 cup bell pepper (diced)
  • 1/2 cup Kalamata olives
  • 1 cup Greek yogurt
  • 1/4 cup fresh parsley or dill (for garnish)

Instructions

  1. Marinate the steak by combining olive oil, lemon juice, minced garlic, oregano, sea salt, black pepper, paprika, and red apple vinegar in a bowl. Add the steak and let it marinate in the refrigerator for at least 15 minutes.
  2. Chop all vegetables and marinate red onion with lemon juice and salt for about 10 minutes.
  3. Preheat a grill pan or skillet over medium-high heat. Cook the steak for 4–5 minutes on each side until medium rare.
  4. Slice the cooked steak against the grain into strips.
  5. In bowls, layer cooked quinoa or brown rice as a base followed by chopped romaine lettuce and assorted veggies.
  6. Drizzle with creamy yogurt sauce made from Greek yogurt, lemon juice, minced garlic, olive oil, salt, and black pepper.
