  • 4 medium Carrots
  • 1 cup Green Lentils
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1/4 cup Toasted Almonds
  • 1/4 cup Fresh Mint Leaves

Instructions

  1. Rinse lentils under cold water and combine them with 3 cups of water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes until tender.
  2. While lentils cook, peel and grate or julienne the carrots.
  3. In a small bowl, whisk together olive oil, minced garlic, lemon juice, cumin, paprika, salt, and pepper.
  4. Once lentils are cooked and slightly cooled, combine them with grated carrots, toasted almonds, and mint leaves in a large mixing bowl.
  5. Drizzle the dressing over the mixture and toss gently to combine.
