  • 10 medium organic lemons
  • 1 (750-ml) bottle lemon juice
  • 3 1/2 cups water
  • 2 1/2 cups sugar

Instructions

  1. Using a vegetable peeler, carefully remove the peels from the lemons in long strips, avoiding the white pith.
  2. Combine the lemon peels and lemon juice in a large bowl or bottle. Cover and steep at room temperature for four days.
  3. In a saucepan over medium heat, dissolve sugar in water to make simple syrup, stirring for about five minutes. Allow it to cool completely.
  4. Pour the cooled simple syrup into the lemon mixture and stir well.
  5. Strain through a mesh strainer to remove peels and transfer to bottles. Seal tightly and refrigerate until chilled (at least four hours).
  6. Serve very cold in small glasses.
