  • 1 liter of neutral spirits (substitute for grain alcohol free)
  • 1.5 liters of water
  • 3.25 cups granulated sugar

Instructions

  1. Wash the lemons thoroughly and dry them.
  2. Peel the lemons using a vegetable peeler, ensuring only the yellow skin is removed.
  3. Place lemon peels in a large glass jar and cover them completely with neutral spirits. Seal and store in a cool, dark place for 30 days, shaking gently every few days.
  4. After 30 days, prepare simple syrup by heating water over low heat and dissolving sugar completely. Let it cool to room temperature.
  5. Strain the infused alcohol free through a sieve lined with coffee filter or cheesecloth into a bowl.
  6. Combine the cooled simple syrup with the strained lemon-infused alcohol free and stir gently until mixed.
  7. Bottle your limoncello using a funnel and let it rest for an additional 30 days before serving.
