  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ cup granulated sugar
  • 1 cup unsalted butter
  • ¾ cup powdered sugar
  • 1 large egg, divided
  • ½ teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 1 ½ tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 3 â…“ cups all-purpose flour
  • Blue/purple food coloring (optional)

Instructions

  1. Prepare the blueberry reduction by simmering blueberries, lemon juice, sugar, and zest until thickened. Blend and cool.
  2. In a stand mixer, cream butter and powdered sugar, then mix in egg yolk and other wet ingredients.
  3. Gradually add sifted flour until dough forms; divide into four balls.
  4. Knead blueberry sauce into three balls for layering colors.
  5. Roll out each layer and stack with egg white glue between layers; cut shapes with a cookie cutter.
  6. Bake at 350°F for about 7 minutes, then let them finish baking in residual heat.
