  • 1012 oz ribeye, sirloin, or flank steak
  • 3 tbsp olive oil (divided)
  • 23 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • Pinch red pepper flakes
  • Salt and black pepper, to taste
  • 2 cups cauliflower rice (or leafy greens)
  • 1 small cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ small red onion, thinly sliced
  • 68 kalamata olives, pitted and halved
  • ¼ cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Marinate steak by combining 2 tablespoons of olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a mixing bowl. Rub onto the steak and let it marinate for 20–30 minutes.
  2. Heat a skillet over medium heat and sauté cauliflower rice in 1 tablespoon of olive oil for 5–7 minutes until tender.
  3. Prep vegetables by dicing the cucumber, halving cherry tomatoes and kalamata olives, and slicing the red onion. Toss with olive oil and a pinch of salt.
  4. Sear the marinated steak in a hot skillet for 4–5 minutes per side for medium-rare doneness. Let rest before slicing.
  5. Assemble your bowl with either cauliflower rice or leafy greens as the base. Top with sliced steak, prepared veggies, crumbled feta cheese (if using), and drizzle with remaining lemon-olive oil dressing.
