  • 24 oz apple cider (non-alcoholic)
  • 1/2 cup apple juice
  • 1/3 cup butter
  • 1/2 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream (divided)
  • 11/2 teaspoons cinnamon

Instructions

  1. Wash and dry the apples thoroughly. Poke holes in each apple with a skewer.
  2. Submerge apples in a mixture of apple cider and apple juice for 3.5 hours.
  3. Remove, dry completely, and skewer each apple.
  4. In a saucepan, combine butter, salt, corn syrup, sugar, half the cream, and cinnamon; heat gently until melted.
  5. Increase heat to simmer until mixture reaches 236°F, then add remaining cream and simmer until it reaches 245°F.
  6. Quickly coat each apple in caramel before it cools; place on parchment paper to set.
