  • 2 cups mashed butternut squash
  • 1 cup ricotta cheese
  • 1/2 cup milk, plus more if needed
  • 1/4 tsp salt, plus 1/8 tsp extra
  • 1/4 tsp ground nutmeg
  • 8 oz fresh spinach (1 cup cooked and drained)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1/4 tsp salt
  • Black pepper, as desired
  • 10 oz lasagna noodles, cooked (tinkyada brown rice noodles for gluten free)
  • 1 1/2 cups mozzarella cheese, shredded, or more
  • 1/2 cup parmesan cheese, grated
  • 1/4 tsp italian seasoning
  • 1/4 tsp paprika
  • 1/4 tsp dried basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the mashed butternut squash with ricotta cheese, milk, salt, and nutmeg. Whisk until smooth.
  3. In a saucepan over medium heat, sauté garlic until fragrant. Add cooked spinach and season with salt and black pepper. Stir well to combine.
  4. Spread a layer of butternut squash mixture at the bottom of your baking dish. Place a layer of cooked lasagna noodles on top. Add half of the spinach mixture followed by a sprinkle of mozzarella cheese. Repeat these layers until all ingredients are used up. Finish with mozzarella and parmesan cheese on top.
  5. Cover with foil and bake in preheated oven for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  6. Allow to cool slightly before slicing. Serve warm and enjoy your delicious Italian Butternut Squash and Spinach Lasagna!
