  • 1 lb boneless, skinless chicken breast
  • 1 can (8 oz) pineapple chunks in juice
  • 1/2 cup BBQ sauce
  • 1 cup white rice
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, cut into wedges
  • 1 tablespoon oil
  • 1 cup water
  • 1 teaspoon oil
  • 1/4 teaspoon salt
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Instructions

  1. Set your Instant Pot to sauté mode. Add oil and diced chicken; season with salt and pepper. Cook until browned (5-7 minutes), then add onion and cook for another minute.
  2. Stir in the pineapple (with juice), BBQ sauce, and diced peppers.
  3. Place a trivet over the chicken mixture, then add rice mixed with water, oil, and salt in an oven-proof dish on top of the trivet.
  4. Secure the lid and set to pressure cook on high for 2 minutes. Allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
  5. Remove the trivet and fluff the rice with a fork. Combine additional BBQ sauce with cornstarch and water; simmer in the pot until thickened (about 1 minute). Serve over rice.
