  • 1.2 liters of spring water (or adjust for fruit spirit)

  2. Combine the lemon zest with the fruit spirit in a glass jar; seal tightly and store in a cool, dark place for one month.
  3. After a month, strain the lemon zest from the spirit.
  4. In a saucepan, mix sugar and water; bring to a boil until dissolved, then let cool completely.
  5. Combine the cooled syrup with the infused spirit; bottle and refrigerate for at least ten days before serving.
