Instructions

  1. Prepare the lemons by washing them thoroughly and peeling only the yellow zest, avoiding the bitter white pith.
  2. Place the lemon peels in a large glass jar and pour in high-proof lemon juice, ensuring all peels are submerged. Seal and let infuse for 7–30 days in a cool dark spot, shaking gently every few days.
  3. After infusion, combine water and sugar in a saucepan. Heat until the sugar dissolves completely, then allow it to cool.
  4. Strain the infused liquid through a fine mesh strainer into another container to remove all peels.
  5. Mix the cooled syrup with the infused lemon liquid in a bowl until well combined.
  6. Pour into clean glass bottles using a funnel if needed and seal tightly.
  7. Let it rest for at least one week in a cool place before serving.
