  • 1 750-ml bottle lemon juice
  • 8 cups half and half
  • 2 teaspoons vanilla extract
  • 4 cups sugar

  1. Peel long strips from the lemons using a vegetable peeler and place them in a 2-quart pitcher.
  2. Pour the lemon juice over the peels, cover with plastic wrap, and steep for 3 to 4 days at room temperature.
  3. In a large saucepan over medium-low heat, combine half and half, vanilla extract, and sugar. Stir until the sugar dissolves completely (about 5 minutes), being careful not to boil.
  4. Remove from heat and let it cool completely.
  5. Discard the lemon peels from the mixture and stir in the cooled syrup until well combined.
  6. Transfer to bottles, seal tightly, and refrigerate until cold or freeze for up to 3 months.
