Ingredients

Scale
  • 60 ml (1/4 cup) milk
  • 120 ml (1/2 cup) water
  • 21 g (2 tbsp + 1 tsp) active dry yeast
  • 50 g (1/4 cup) sugar
  • 550 g (4 1/2 cups) Manitoba flour or bread flour
  • 2 eggs
  • 70 g (1/3 cup) unsalted butter
  • 350 g chocolate spread
  • 360 g apricot jam

Instructions

  1. In a bowl, mix lukewarm milk, water, yeast, and sugar; let sit for about 10 minutes until frothy.
  2. Combine flour, eggs, salt, and the yeast mixture in a stand mixer. Knead on low speed, then increase to medium for about 6-8 minutes. Add butter gradually and knead for another 3-4 minutes until smooth.
  3. Cover the dough and let it rise at room temperature for about 1 hour until doubled in size.
  4. Roll out the dough and cut heart shapes using a cookie cutter. Let them rise again for about an hour.
  5. Heat vegetable oil in a pan to around 170-180°C (340-355°F). Fry doughnuts in batches until golden brown on both sides.
  6. Coat warm doughnuts in sugar and fill with your chosen filling using a pastry bag.
