  • 2 tbsp canola oil (for roasting squash)
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tbsp maple syrup
  • 1/2 tsp salt (for roasting squash)
  • 1/2 tsp black pepper (for roasting squash)
  • 1 cup couscous
  • 1 cup boiling water
  • 1 1/2 tsp canola oil (for ground turkey filling)
  • 1 1/2 cups red onion, minced
  • 1 lb ground turkey
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (for turkey filling)
  • 1/2 tsp black pepper (for turkey filling)
  • 3 cups swiss chard, finely chopped
  • Juice from 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the butternut squash with canola oil, nutmeg, cinnamon, maple syrup, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. Prepare couscous by pouring boiling water over it in a saucepan; cover and let sit for 5 minutes.
  4. In a skillet, heat canola oil over medium heat. Sauté minced red onion until translucent. Add ground turkey and seasonings; cook until browned.
  5. Stir in swiss chard until wilted, then combine with roasted squash and couscous. Squeeze fresh lemon juice before serving.
