  • 1 lb boneless skinless chicken thighs
  • 2 cloves grated garlic
  • 1 tbsp grated ginger
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp tomato paste
  • 2 tbsp pineapple juice
  • 1 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 cup fresh pineapple (cut into chunks)
  • 1 cup cooked edamame beans
  • 1 small red onion (sliced)
  • 1 large carrot (shredded)
  • 1 whole avocado (sliced)
  • 1 cup baby cucumbers (sliced)
  • 2 stalks spring onions (chopped)
  • 1 tbsp toasted sesame seeds
  • 2 tbsp light mayo

Instructions

  1. In a mixing bowl, combine grated garlic, ginger, soy sauce, maple syrup, apple cider vinegar, tomato paste, pineapple juice, sriracha, and sesame oil to make the marinade.
  2. Cut chicken into bite-sized pieces and marinate for at least 20 minutes.
  3. Heat a skillet over medium heat and cook the marinated chicken for about 7–10 minutes until browned and fully cooked.
  4. In serving bowls, layer cooked jasmine rice followed by the cooked chicken and top with assorted fresh vegetables.
  5. Drizzle with light mayo or any remaining marinade before serving.
