This quick and satisfying fried rice is a flavorful way to transform leftover rice into a delicious meal. 4 cups leftover cooked rice (preferably day-old)
3 large eggs, whisked
3 tablespoons soy sauce (adjust to taste)
2 tablespoons vegetable oil (or sesame oil for extra flavor)
2 cups mixed vegetables (such as peas, carrots, and corn)
2 cloves garlic, minced (optional)
1 inch fresh ginger, minced (optional)
2 green onions, sliced

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat until it begins to shimmer.

  2. Pour the whisked eggs into the skillet and scramble gently until fully cooked and fluffy. Transfer the eggs to a plate and set aside.

  3. In the same skillet, add the minced garlic and ginger if using. Sauté for about 1 minute until fragrant.

  4. Add the mixed vegetables to the skillet and stir-fry for 3–4 minutes, cooking until they are tender but still vibrant.

  5. Add the cooked rice and soy sauce to the skillet. Stir well to break up any clumps and evenly coat the rice with sauce. Cook until the rice is heated through.

  6. Return the scrambled eggs to the skillet and add the sliced green onions. Gently fold everything together and cook for another 1–2 minutes until well combined and hot.

  7. Serve immediately while warm.
