  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (softened)
  • 1 cup chocolate batons or semi-sweet chocolate
  • 1 tbsp milk (for egg wash)
  • to taste confectioners’ sugar (for dusting)

Instructions

  1. Combine flour, sugar, salt, and yeast in a stand mixer bowl. Gradually add cold milk until a dough forms.
  2. Knead on a floured surface for about 5 minutes. Cover and let rise in a warm place until doubled (approximately 90 minutes).
  3. Prepare the butter layer by rolling softened butter between parchment paper into a rectangle and refrigerate.
  4. Roll out the dough into a large rectangle, encasing the chilled butter inside. Roll out to form layers.
  5. Perform three folds of the dough at intervals, chilling as needed. Wrap tightly and refrigerate for at least an hour.
  6. Cut triangles from the dough, place chocolate batons at wide ends, and roll up.
  7. Arrange croissants on a baking sheet to proof until doubled (about 45 minutes).
  8. Preheat oven to 375°F (190°C) and bake croissants for about 20 minutes until golden brown.
