  • 5 medium red Romano peppers
  • 2 cups crumbled feta cheese
  • 6 tablespoons Greek yogurt
  • ¼ cup fresh dill (chopped)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic (grated)
  • Salt

Instructions

  1. Preheat your oven to 220 C / 420 F. Line a baking pan with parchment paper.
  2. Make a slit in each pepper and brush them lightly with olive oil. Bake for about 5 minutes until slightly softened.
  3. Let the peppers cool, then remove the seeds.
  4. In a mixing bowl, combine olive oil, feta cheese, Greek yogurt, dill, and garlic; season to taste with salt.
  5. Stuff each pepper with the filling and return them to the oven for another 10 minutes.
  6. Whisk together olive oil, garlic, and lemon juice for dressing while they bake.
  7. Drizzle the dressing over the stuffed peppers before serving.
