  • 1 1/2 pounds strawberries, quartered or diced
  • 1/3 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch
  • 1/2 teaspoon vanilla extract
  • Pinch of kosher salt

Instructions

  1. Slice or dice strawberries and set aside a third for later.
  2. Combine two-thirds of the strawberries with sugar in a saucepan.
  3. Mix lemon juice, cornstarch, vanilla, and salt in a small bowl until smooth; add to the saucepan.
  4. Stir over medium heat until boiling; then reduce heat and cook for 4-5 minutes until thickened.
  5. Remove from heat and stir in the remaining strawberries.
  6. Cool completely before transferring to an airtight container; chill until ready to serve.
