  • 1 cup long-grain white rice (or brown rice)
  • 2 cups chicken broth
  • 1 cup bell peppers
  • 1 cup zucchini
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste
  • 1 teaspoon paprika
  • fresh parsley or cilantro for garnish

Instructions

  1. Chop vegetables into bite-sized pieces. If using chicken breasts, cut them into cubes.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until translucent.
  3. Stir in bell peppers and zucchini; cook for about 5 minutes until softened.
  4. Add the chicken to the skillet and season with salt, pepper, and paprika. Cook until browned (7-10 minutes).
  5. Mix in the rice until coated with flavors. Pour in chicken broth and bring to a simmer; cover and cook on low heat for about 20 minutes until rice is fluffy.
  6. Remove from heat and let sit covered for another 5 minutes before fluffing with a fork. Garnish with fresh herbs.
