  • 1 box french vanilla cake mix
  • 1 large egg
  • 1/2 cup unsalted sweet cream butter
  • 3 cups Easter sprinkles
  • 1/2 cup unsalted sweet cream butter (for frosting)
  • 2 1/2 cups powdered sugar
  • 2 tablespoons heavy whipping cream
  • Pink gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a standing mixer, combine the cake mix, egg, and butter until a soft dough forms. Stir in 1 cup of Easter sprinkles.
  3. Use a small cookie scoop to form balls of dough, rolling each in remaining sprinkles.
  4. Place the coated dough balls on prepared cookie sheets and bake for 10-12 minutes until set. Cool completely.
  5. For the frosting, beat together butter, powdered sugar, heavy whipping cream, and pink gel food coloring until creamy.
  6. Pipe frosting onto one half of each cooled cookie and sandwich them together.
