  • 1 can (13.5 fl oz) coconut milk
  • 23 tablespoons red curry paste
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove, grated
  • 1 small cube ginger, grated
  • 1620 veggie dumplings (frozen)
  • 2 bok choy bulbs, chopped
  • 1 zucchini, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). In a large baking dish (12 x 8 inch), whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger until smooth.
  2. Add chopped bok choy and zucchini to the broth mixture and stir well.
  3. Place frozen dumplings into the broth without overlapping them. Press them down slightly so they are partially submerged.
  4. Cover the baking dish with aluminum foil and bake for 20 minutes; then remove the foil and bake for an additional 5–10 minutes until bubbly and lightly crispy on top.
