  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 tsp vanilla extract
  • ½ cup finely ground pistachios
  • ¼ cup cocoa powder
  • 1 cup semi-sweet chocolate chips (for glaze)
  • 2 tbsp butter (for glaze)
  • ½ cup chopped pistachios (topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf or bundt pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt until smooth.
  3. In another bowl, combine eggs, vegetable oil, milk, vanilla extract, and Greek yogurt until well mixed.
  4. Combine wet ingredients into the dry mix and stir until just blended.
  5. Separate batter into two bowls; mix ground pistachios into one and cocoa powder plus mini chocolate chips into the other.
  6. Alternate spoonfuls of both batters into the prepared pan and swirl gently with a knife.
  7. Bake for 45–55 minutes until a toothpick comes out clean. Cool completely before glazing.
  8. Melt together chocolate chips, butter, and cream for the glaze; pour over cooled bread and top with chopped pistachios.
