  • 2 cups fresh pineapple (cut into 1-inch chunks)
  • 1 red bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 3 green onions (thinly sliced)
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons brown sugar
  • 2 tablespoons vegetable oil

Instructions

  1. Season chicken with salt and pepper.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook chicken until golden brown, about 4-5 minutes. Remove from pan.
  3. In the same skillet, sauté red bell pepper for 2 minutes. Add garlic and ginger; cook for another 30 seconds.
  4. Stir in pineapple and cook until slightly caramelized, about 3 minutes.
  5. Combine soy sauce, rice vinegar, and brown sugar in a bowl. Pour into the skillet and bring to a simmer.
  6. Return chicken to the skillet, tossing everything together for an additional 2-3 minutes until sauce thickens.
  7. Garnish with sliced green onions before serving.
