  • 0.5 cups Extra-Virgin Olive Oil
  • 2 medium Shallots
  • 8 sprigs Fresh Thyme
  • 12 Bay Leaves
  • 4 cloves Garlic
  • 2 tablespoons Whole Black Peppercorns
  • 1 tablespoon Dried Herbes de Provence
  • 6 tablespoons Unsalted Butter (can be omitted for a dairy-free version)
  • Fresh Parsley or Celery Leaves (for garnish)
  • 1 teaspoon Kosher Salt

Instructions

  1. Wash and cut the celery into 3-4 inch pieces.
  2. In a large pot, heat olive oil over medium heat and sauté sliced shallots until translucent, then add minced garlic.
  3. Add celery pieces, chicken stock, and white apple vinegar; stir well.
  4. Incorporate bay leaves, thyme sprigs, black peppercorns, salt, and butter; bring to a simmer.
