  • 25 g Fresh Yeast (or active dry yeast)
  • 3 medium Eggs (or flax eggs for vegan option)
  • 100 g Unsalted Butter (or vegan butter)
  • 500 ml Whole Milk (or almond/soy milk)
  • 1 Vanilla Pod (or 1 tsp vanilla extract)
  • 30 g Cornstarch
  • 100 g Mini Chocolate Chips

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Dissolve yeast in warm milk; add to dry ingredients with eggs and melted butter. Mix until a soft dough forms; knead for about 10 minutes until elastic.
  3. Place the dough in a greased bowl; cover and let it rise in a warm place until doubled in size (about 1 hour).
  4. For custard filling, simmer milk with vanilla pod. Whisk egg yolks, sugar, and cornstarch together; gradually add hot milk mixture while whisking. Return to heat and cook until thickened.
  5. Preheat oven to 180°C (350°F). Punch down risen dough, divide into portions, flatten slightly, and fill with chocolate chips and custard before sealing.
  6. Arrange on lined baking sheets; let them rise again for about 30 minutes before baking for about 12 minutes until golden brown.
