  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons salt
  • 1 tablespoon active dry or instant yeast
  • 1 1/2 cups cold whole milk
  • 1 1/2 cups unsalted butter (for layering)
  • 2 tablespoons all-purpose flour (for finishing)
  • 1 large egg
  • 2 tablespoons whole milk (for egg wash)

Instructions

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast. Mix well before adding cold milk and softened butter.
  2. Attach a dough hook and mix on low speed until combined, then increase to medium speed and knead for about 5 minutes until smooth. Shape into a ball.
  3. Wrap the dough in plastic wrap and refrigerate for at least 90 minutes.
  4. Prepare the butter layer by flattening softened butter between two sheets of parchment paper into a rectangle about 1/2 inch thick; refrigerate until firm but pliable.
  5. Roll out chilled dough into a large rectangle; place the chilled butter layer in the center and fold dough over like a letter. Roll out again and fold into thirds; repeat this process three times.
  6. Roll out one last time into a rectangle about 1/4 inch thick; cut triangles with a base of about 6 inches and roll tightly to shape croissants.
  7. Place on baking sheets lined with parchment paper, cover loosely, and let rise until doubled in size (about 60 minutes).
  8. Preheat oven to 400°F (200°C). Brush croissants with egg wash made from beaten egg mixed with milk.
  9. Bake for about 18 minutes or until golden brown; allow cooling slightly before serving.
