  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • as needed vegetable oil
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1 clove garlic (minced)
  • to taste salt and pepper

Instructions

  1. Cut cod fillets into bite-sized pieces.
  2. Set up a breading station: season flour with garlic powder, then prepare beaten eggs and panko breadcrumbs in separate bowls.
  3. Coat each piece of cod in seasoned flour, dip in egg, then roll in panko breadcrumbs until fully covered.
  4. Heat vegetable oil in a skillet over medium-high heat and fry cod bites in batches until golden brown (about 3-4 minutes each side).
  5. For the dip, mix mayonnaise, Greek yogurt, lemon juice, lemon zest, chopped herbs, minced garlic, salt, and pepper until smooth.
  6. Serve hot with the creamy dip on the side.
