  • 1 cup Panko Breadcrumbs (gluten-free for a gluten-free version)
  • 1/2 cup Nutritional Yeast (substitute for Parmesan Cheese)
  • 1 tsp Garlic Powder (or use fresh garlic for stronger flavor)
  • 1 tsp Paprika (or smoked paprika for a unique twist)
  • 1 tsp Salt (to taste)
  • 1/2 tsp Black Pepper (to taste)
  • 2 large Eggs (beaten)
  • 1/4 cup All-Purpose Flour (or almond flour for keto version)
  • as needed Olive Oil Spray (to achieve a crisp finish)
  • 1/2 cup Vegan Mayonnaise
  • 2 cloves Garlic (minced or finely grated)
  • 1 tbsp Lemon Juice (freshly squeezed preferred)

Instructions

  1. Preheat your oven to 400°F (200°C). This temperature will help achieve that perfect crispiness.
  2. In a mixing bowl, combine the panko breadcrumbs, nutritional yeast, garlic powder, paprika, salt, and black pepper. Mix well until evenly combined.
  3. In separate bowls, beat the eggs in one bowl and place flour in another bowl.
  4. Take each artichoke heart, dredge it lightly in flour, dip it into beaten eggs, and then coat it with the breadcrumb mixture.
  5. Place the coated artichoke hearts on a baking sheet lined with parchment paper. Ensure they are spaced out to allow even baking.
