  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups cracker crumbs (such as Ritz or Keebler Club)
  • 1/4 cup melted butter

Instructions

  1. Thaw broccoli florets if frozen and warm in the microwave for about 5 minutes. Drain well and cut into bite-sized pieces.
  2. In a mixing bowl, combine the broccoli, 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, beaten egg, and salt. Mix well and transfer to a greased baking dish.
  3. Top with the remaining cheddar cheese.
  4. Combine cracker crumbs with melted butter until moistened; sprinkle evenly over the casserole.
  5. Bake at 350°F for 45-50 minutes until bubbly and golden brown.
