  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1 1/3 cups grated carrot
  • 16 ounces cream cheese
  • 1/2 cup granulated sugar
  • 2 teaspoons all-purpose flour
  • Powdered sugar for icing
  • Water or milk for icing
  • 1 teaspoon vanilla extract for icing

Instructions

  1. Preheat your oven to 350°F. Line a 9-inch square baking pan with parchment paper.
  2. In a mixing bowl, blend melted butter, brown sugar, eggs, and vanilla until combined. Add flour, baking powder, baking soda, salt, and cinnamon; mix until just incorporated. Stir in grated carrots.
  3. For the cheesecake layer, beat cream cheese and granulated sugar until fluffy. Add eggs one at a time and mix until smooth.
  4. Spread two-thirds of the carrot cake batter into the prepared pan, followed by two-thirds of the cheesecake batter. Dollop remaining carrot cake batter and drizzle the rest of the cheesecake batter on top.
  5. Bake for 45-55 minutes; cool in pan before chilling in the fridge for at least three hours.
  6. Whisk powdered sugar with vanilla and water to create icing; drizzle over cooled bars before slicing.
