  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 tablespoons butter
  • 1 1/2 teaspoons vanilla extract
  • 34 croissants
  • 3 ounces semi-sweet or bittersweet chocolate
  • Optional: Chopped nuts for garnish

Instructions

  1. In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix until pale yellow. Gradually whisk in light cream. Cook over medium heat, stirring constantly until thickened (about 1 minute). Remove from heat; stir in butter and vanilla. Cool fully before refrigerating.
  2. Slice each croissant horizontally to create pockets and fill generously with chilled pastry cream.
  3. For the ganache, melt chopped chocolate and remaining light cream over simmering water until smooth. Let cool slightly.
  4. Drizzle ganache over filled croissants and immediately sprinkle with chopped nuts.
  5. Allow to set at room temperature or chill briefly before serving.
