  • 1 Red Onion (chopped)
  • 1 Red Bell Pepper (seeded and chopped)
  • 1 ½ Pounds Ground Beef
  • 1 Can Kidney Beans (15 oz, drained)
  • 1 Can Pinto Beans (15 oz, drained)
  • 1 Can Black Beans (15 oz, drained)
  • 1 Can Fire Roasted Tomatoes (15 oz, with juice)
  • 1 Can Tomato Paste (6 oz)
  • 1 Jalapeño (seeded and minced – optional)
  • 2 Cups Beef Stock
  • 1 Tablespoon Oregano (dried)
  • 2 teaspoons Cumin
  • 1 Tablespoon Cocoa Powder
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper (ground)
  • 1 ½ teaspoons Smoked Paprika
  • 1/2 teaspoon Ground Coriander
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Garlic (minced)
  • Sour Cream (for topping)
  • Cilantro (for topping)
  • Shredded Cheese (for topping)

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crisp. Remove and set aside.
  2. In the same pot, sauté chopped onions and bell peppers until tender.
  3. Add ground beef and cook until browned; drain excess grease.
  4. Stir in kidney beans, pinto beans, black beans, fire-roasted tomatoes, tomato paste, and spices along with 3/4 of the cooked turkey bacon.
  5. Cover and simmer for at least 45 minutes.
  6. Serve in bowls topped with sour cream, shredded cheese, cilantro, and reserved turkey bacon.
