Instructions

  1. Preheat your oven to 350°F and prepare a nonstick angel food cake pan.
  2. Prepare the cinnamon walnut streusel by pulsing walnuts in a food processor with flour, brown sugar, and cinnamon; add cold butter until crumbly. Set aside.
  3. Whisk together dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
  4. In a mixing bowl, cream together softened butter and sugar until fluffy; incorporate eggs one at a time followed by mashed bananas and vanilla extract.
  5. Gradually mix in the dry ingredients alternating with sour cream until just combined.
