  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp water (for slurry)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange chicken thighs skin-side up in a baking dish.
  2. In a medium saucepan over medium heat, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Bring to a boil then simmer for about 10 minutes.
  3. In a small bowl, mix cornstarch with water to create a slurry. Gradually whisk into the simmering sauce until thickened.
  4. Pour the glaze over the chicken thighs, ensuring they are well-coated. Bake uncovered for 45–60 minutes until the internal temperature reaches 165°F (74°C), basting halfway through.
