  • 3/4 cup + 2 tablespoons buttermilk
  • 1/4 cup fresh lemon juice
  • 1 to 1 1/4 cups fresh blueberries

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, sugar, lemon zest, baking powder, baking soda, and salt until combined.
  3. Grate cold butter into the mixture and toss until evenly coated.
  4. Gently fold in blueberries.
  5. Add buttermilk and lemon juice; stir until just combined.
  6. Turn the dough onto a floured surface and shape into a rectangle about 15×3 inches.
  7. Cut into triangular wedges and place on the prepared baking sheet.
  8. Brush tops with melted butter and sprinkle with coarse sugar before baking for around 15 minutes until golden.
