Ingredients

Scale

1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1/2 cup cornstarch (for coating)
1/2 cup orange marmalade (adjust to taste)
1/4 cup soy sauce (or tamari for gluten-free option)
2 tablespoons cooking oil (neutral oil such as vegetable or canola)

Instructions

  1. Place the chicken pieces in a bowl and toss them with cornstarch until evenly coated.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the coated chicken pieces and cook until golden brown and crispy on all sides, about 5–7 minutes.
  4. Reduce the heat to medium and pour in the orange marmalade and soy sauce.
  5. Stir well to coat the chicken evenly and let the sauce simmer for 2–3 minutes until thickened.
  6. Remove from heat and serve immediately, optionally with rice or vegetables.
